- Batir el huevo a punto de listón y atemperar con la mezcla ya que esté hirviendo
- Después de a ver atemperado la mezcla verter en la olla, mezclar hasta que hierva y reservar
- Para el bizcocho tener todos los ingredientes listos
- Batir las yemas de huevo a punto de listos después agregar poco a poco el azúcar glass, agregar la vainilla y poco a poco la harina suave de 65 gr ya cernida con un pisco de sal, una vez lista reservar
- Batir a punto de listón las claras con el azúcar una vez lista verter la mezcla de la yema en el merengue francés intercalado con la harina suave de 130 gr y mezclar con mucha delicadeza
- Ya lista la mezcla verter en la charola con papel estrella y extender, hornear a 150 °c por 15 a 20 minutos
- Ya que esté listo el bizcocho enfriar por 5 minutos, cortarle de los lados para darle forma, desmoldar en un paño húmedo, humedecer con leche
- Rellenar el bizcocho con la crema de limón y mermelada ya lista empezar a enrollar para darle forma
