Mezclamos la levadura y la harina, lo dejamos reposar tapado en el refrigerador si es una noche antes o un lugar cálido si es unas horas antes de la preparación.
- Para preparar la masa, primero hay que lavar y pelear la zanahoria y hacerlas en pequeños cubos, lavar y cortar en trozos pequeños el apio.
- Formamos un volcán con las harinas y la levadura y agregamos por pocos el poolish junto con chorros de agua hasta formar la masa.
- Una vez integrados todos los ingredientes debemos obtener una masa un poco pegajosa y agregar de poco en poco el aceite.
- Debamos lograr una masa un poco pegajosa pero que no se quede pegada a la mesa.
- Untamos un poco de aceite en la parte superior de la masa y dejamos reposar en un lugar cálido para el proceso de fermentado.
- Una vez que fermentó, hay que aplanar la masa de un grosor de más o menos 1 cm o 1.5 cm y cortarla en cuadrados.
- La masa debe quedar así al final.
- Después, untamos un de aceite de oliva en la parte de arriba, colocamos la zanahoria y el apio y un poco de pimienta molida, enharinamos una charola, con mantequilla y harina y precalentamos el horno a 180° C por 10 min.
- Horneamos por 30 min. A una temperatura de 200° C o hasta que queden de un color café por la parte de abajo.
- Y listo podemos acompañar una comida con estos deliciosos panes o en forma de emparedado.
