- En el volcán añadimos la mitad del poolish y mezclamos, cuando veamos que no tenemos suficiente líquido agregamos lo que nos queda del poolish
- Cuando esté integrado el poolish, agregamos aceite de oliva esto aportara sabor a nuestra masa.
- Amasamos hasta que tengamos una masa un poco pegajosa
- La colocamos en un recipiente, y lo dejamos reposar hasta que doble su tamaño.
- Cuando haya doblado su tamaño, pochamos la masa
- Enharinamos nuestra superficie de trabajo y con ayuda de un rodillo comenzamos a extender nuestra masa con un grosor de 2 cm aproximadamente.
- Cuadramos nuestra masa y hacemos rectángulos de 15 por 5 cm aproximadamente, y los colocamos en una charola enharinada.
- Cuando estén en la charola, le colocamos el pimiento cortado en julianas, en donde tendrán una segunda fermentación.
- Una vez hallan doblado su tamaño, las metemos al horno a 180º de 25-40 minutos. Recordemos que este pan es blanco, entonces tendremos que revisar la parte de abajo para ir viendo su cocción.
