Cortar los tomates en concasse: para eso vamos a cortar en forma de cruz la punta de nuestro tomate y quitamos la parte trasera con un mondador, los vamos sumergir en agua hirviendo por 10 segundos, sacamos y paramos cocción con choque térmico de agua fría, pelamos el tomate, le quitamos las semillas y lo cortamos en cubos pequeños. - Untar la masa con un poquito de aceite de oliva extra virgen.
- Poner el tomate en toda la base de la masa, luego agregar el queso mozzarella rallado.
- Salpimentar, agregamos aceite de oliva y las hojas de albahaca.
- Hornear por 20 minutos.
